Rabbits are the awkward animal to farm
Rabbits breed on carrots, golden carrots or dandelions, and they spawn in deserts, snowy places and meadows rather than in ordinary grassland. That combination makes a rabbit pen a deliberate project instead of something that happens near a village on its own.
The meat is the least of what they drop. Hide turns into leather four to one, and the foot is the only source for Potion of Leaping, so a hunter usually wants the rabbit for something other than dinner. Cooked rabbit still feeds you about as well as cooked chicken.
What comes off a rabbit besides the meat
A rabbit can drop hide as well, and two hides make one leather, which matters in a desert or a snowy biome where there are no cows to shear or kill. That makes rabbits the leather supply of the biomes that have none.
The foot is the rare one, and it is the base of the leaping potion, so a rabbit pen is a brewing supply as much as a food one.
