The name is older than the game by a long way: a daisy with a dark, round center circled by white petals looks enough like an eye that the name stuck centuries before anyone wrote a line of Minecraft code. In the game itself it is a plain decorative plant, and the Wandering Trader is the only stall selling it, at 1 emerald a stem.

Crush it and you get light gray dye. Azure Bluet and White Tulip produces the exact same shade, so buying an oxeye daisy for its color is really buying whichever of the two flowers happens to be in stock. The dye itself is mostly a wool and terracotta color, useful for muting a build rather than for anything that needs to stand out.

The Wandering Trader is the whole market. He asks 1 emerald for 1 oxeye daisy and does not offer to buy it back at any price, so the emeralds only move one way.

No profession villager touches it. Flowers of this kind sit outside the job system entirely, which is why there is exactly one row on this listing rather than several.

He asks 1 emerald each, and 36 of the other 75 come cheaper. Price is the easy part: he draws his stock from a shared pool, so catching one that happens to be carrying oxeye daisy is the real constraint.

Nothing about placing or breaking a block changes his stock, because there is no workstation behind this offer at all.

Selling oxeye daisy back to him is not possible. His buying list covers six named items and this flower is not among them, so the trade only ever runs from his inventory into yours.

Each trader only carries a rolled sample of the full list rather than everything at once, so the one you find might simply not have oxeye daisy that visit. If he does and the build needs more later, a name tag removes his despawn timer and turns him into a standing shop.

It shares that job with the azure bluet and the white tulip. Three flowers, one dye, so whichever of them grows near your base is the right one and the other two are decoration.

Bone meal on grass in the right biome keeps producing them, which makes light gray one of the easier colours to supply in quantity once you know which flower to look for.
